Continuing the tradition of gastronomic festivals in Lambic, we decided to pay special attention to one of main specialties of Belgium — waffles. The main menu of Lambic has been featuring classic dough waffles with adding potatoes with various toppings and sweet wheaten which our guests love for many years. On the festival menu, Lambic chefs present their own interpretations of this traditional dish. Five types of wafers made from buckwheat, corn, rice, wheat and rye flour with various fillings for any taste! More than half of the menu items are gluten-free and marked with a special sign in the menu. Each position has a recommendation for combining the dish with unusual beer from a huge Lambic beer atlas. Bayreuther Hell — refreshing Bavarian hel with rich taste and subtle hop bitterness. Bornem Blonde — pale Belgian ale brewed by Brouwerij Van Steenberge. The Bornem line was dedicated to the Abbey of Sint-Bernardus, which was located in the vicinity of the city of Bornem. Schneider Weisse Tap 7 Unser Original — a unique wheat beer brewed according to the original recipe developed by the founder of the brewery G. Schneider & Sohn in 1872 . Thanks to the harmonious combination of only the best ingredients, the beer has a mild, rich taste. Young’s Double Chocolate Stout — a chic stout with a dense black color, slightly sweet taste with dominant notes of dark chocolate, caramel, vanilla, raisins and roasted malt. This stout uses real dark chocolate and chocolate essence. Beer has never received high awards at international competitions. «Petrus Bordo» — this variety is made on the basis of a sour ale aged in a special large oak barrel — fuder, which in turn is the hallmark of the brewery. We decided to start 2021 with a big festival, during which we will cook your favorite mussels according to new recipes. The team of our chefs has developed 6 new sauces for mussels, a plate of which we will be preparing throughout January for 740 rubles only until 10 February! The sauces for this time are unusual — some based beers from our Beer Atlas, and also truffle, mushroom and Tom Yum. We added large New Zealand kiwi mussels with 3 different fillings to the menu to make the festival really big!
